GrigioRamato from the Italo Cescon winery: Label of the year 2021

GRIGIORAMATO – “macerated” Pinot Grigio

Pinot Grigio has its own natural intensity and aromatic depth: we wanted it to express them fully. We left it in contact with what surrounds the grapes from their origin, the skin, inside amphorae where flavors and aromas are released without forcing, without haste, simply waiting for the must to welcome the best of aromas, properties and color. The result is GrigioRamato: macerate with great structure, intense sensory experience, a profound expression of our territory and of this grape variety.

Harvesting system: By hand with selection of the bunches
Vinification: Maceration on the skins and spontaneous fermentation in amphora for 20 days. The aging takes place partly in amphora and partly in second passage tonneaux for a period of 8 months. Not filtered.
Refinement period: In the bottle for at least 12 months.

TASTING NOTES

Organoleptic notes: With a coppery, orange color, slightly veiled due to lack of filtration. Initial protagonists are the aromas of citrus, grapefruit and mandarin, gradually giving way to hints of ripe apricot, licorice, light notes of mint and pine. On the palate it is full and enveloping, fresh, with delicate tannins and a mineral finish.

Pairing: Excellent as an aperitif, it goes perfectly with fried foods, fish-based appetizers and white meats. Curious with aged and blue cheeses. Also worth trying with oriental cuisine.
